Gustavo Arellano knows a thing or two about perfect Mexican food. Growing up in Anaheim, California Mexican food meant chowing down on mom’s special capirotada bread pudding or tia’s menudo. Now the 33-year-old enjoys those traditional favorites alongside fluorescent-orange cheese topped nachos, bacon-wrapped Sonoran-style hot dogs, and burritos stuffed with hamburger meat and chicharrónes, slathered in chile sauce – all quirky dishes that are an integral part of America’s love affair with Mexican food and the subject of Arellano’s newest book, “Taco USA.”
